My  thoughts:

Why hadn't I used rice vinegar before? I've been using it to replace vinegar in many of my dishes or just to add a splash of flavor.  I love the original in coleslaw. It adds a great sweetness. I've also used the mango to marinate on chicken - YUM!  I love having the different flavors on hand to give inspiration to my dishes.
