Quinoa Greek Salad

Looking for something yummy and different to bring to the BBQs this week?  Try this yummy Quinoa Greek Salad!

 Ingredients:
2 cups of Quinoa prepared according to package instructions cooled
1/2 container Feta cheese
small jar kalamata olives - chopped
1 pintgrape tomatoes (chopped if you prefer)
2 cucumbers (peeled and quartered)
1/4 red onion chopped.
 red wine vinegar
olive oil
salt & pepper to taste

So basically I just cut, chopped and added to a big bowl!  I only did one cucumber but next time I will do more (adjusted above).  For the dressing I did 1/2 cup of vinegar and 1/4 cup olive oil.

Of course add/adjust to your own taste!
